The year 2020 has been particularly dry, and this shortage of water caused a slowdown in the trees\' growth. However, the higher level of liquid sugar concentrated in the leaves provides with an amazing aroma, with a greater complexity.

The freshness of the leaves is overwhelming, and the precious floral bouquet typical of its aftertaste is not long in coming, together with a surprising minerality. After realizing the great aging potential of these leaves, we decided to press them by stone and store them in traditional bamboo Ti, to ensure the best conservation for the years to come.

Infusion Parameters

EASTERN BREWINGQuantity: 1 gr. of tea every 30 ml of waterRinse: before starting the infusion, rinse the leaves with a very fast washing in order to let them rehydrate and release a more intense brew. Gently cover the leaves with boiling water and pour it after a few seconds.Brewing time: Begin with a 10-15 second brew. Increase with each successive brew as needed. COLD BREWQuantity: 1 gr. of tea every 100 ml of waterBrewing: put the tea leaves in room temperature water and steep for 6-7 hours. Filter the liquor and drink within 24 hours.
