• Hand-Harvested: Hand-picking ensures the fruit isn’t damaged and impacts the flavor and quality of the oil.
• Cold pressed: Pressed within hours of harvest by a master miller.
• Harvest date transparency: The single most important thing to know. Oil doesn\'t age well like wine. It is essential to know when it was made, not an arbitrary expiration date.
• Greener fruit: We pick our olives early in the season, which gives the oil that bright and green, peppery, herbaceous flavor, has a higher concentration of polyphenols (the free-radical fighting antioxidant), and provides a longer shelf life. The spicier the oil = the more polyphenols.
• Plastic-Free: Good for you & the environment, keep microplastics out of your oil. Our packaging is made of glass, paper, cork, and wood. Even the shiny wrapper on the cork is made of biodegradable wood pulp.
• Organic practices: While not certified, we use organic practices and do not use pesticides or fertilizers on the olives.
