Casale Selvapiana:

Casale Selvapiana was founded in 1991. Thirty years later, Martina, Lorenzo and Chiara run the business, bringing their own perspectives while keeping the core values intact.Extraction is carried out using cold pressing and the oil is left unfiltered.The harvest takes place by hand in October, and the olives go directly to the mill. Within a few hours, they are cold pressed using a traditional two-phase process that keeps the oil unfiltered and rich in polyphenols.
