Key Features

• This is an authentic iron Gyoza pan. It is fun to see the pan is being coated with oil over time and getting better to use.


• Thick pans can retain heat and conduct it deep inside of ingredients so that they will be soft and juicy.

Use & Care

• At the time of delivery, iron products are coated with protective varnish to prevent them rusting during transport and storage. The varnish needs to be burnt off over high heat to expose the bare metal underneath, and the wok needs to be thoroughly seasoned before first use.

Background

Nakao-Alumi Co Ltd, founded in 1958 in Tokyo, is one of the leading manufacturers of high quality aluminium pots in Japan. Their pots and pans museum is located in Kappabashi, a street in Tokyo between Ueno and Asakusa which is almost entirely populated with shops supplying the restaurant trade. The founder Mr Nakao was awarded a medal by La Chaîne des Rôtisseurs France, an International Association of Gastronomy in 1994.
