The good news is... all of them are Ceremonial grade! U1 & U2 are from Uji, Kyoto, Japan, whilst Y1 & Y2 come from Yame, Fukuoka, Japan. They all have drastically different flavor profiles due to terrior, cultivars, and different processing methods (U2 & Y2 are machine trimmed).
