This technique uses far-infrared radiation to bake the potatoes with their skins on, preserving their flavor and enhancing their taste compared to boiling. Ideal for use with a yakiimo pot or Dutch oven, this method is not only perfect for sweet potatoes but also works wonderfully with potatoes, chestnuts, and corn. Remember to cut a slit in chestnuts before baking.
To prepare, wash the stones and sweet potatoes. Place the stones in a Dutch oven and preheat over medium heat with the lid on for about 30 minutes. Once preheated, arrange the sweet potatoes so they are covered by the stones, using gloves for protection. Keep the lid on and switch to low heat, allowing the sweet potatoes to bake for approximately 30 minutes.
