HOT ! Petite Pistachio Cookies * Pistachio 7 Layer Cookies

These Cookies are my newest recipe creation - you will not find anything like these anywhere.  These cookies start with my homemade Pistachio Cream, which is made a day ahead of the cookies.  The cookies themselves are made in a similar fashion to my Italian Rainbow Cookies - but instead of almond flavored cake layers, these cookies have pistachio flavored cake.  Two layers are a light green flavor, the center is a mild yellow.  Held together with raspberry preserves and covered in white chocolate & topped with choice of Pastel colored Sprinkles or Nonpareils. 

Quantity Options 3 pounds, 2 pounds or 1 pound - quantities per pound vary, generally this is 20 - 24 cookies per pound.  Cookies are sliced by hand, so may not all be exact same size.

Ingredients: organic butter, organic eggs, organic pistachio cream (pistachios, butter, milk, sugar and vanilla extract, all organic), flour, sugar, organic homemade pistachio extract, Ghirardelli White Chocolate, food grade colorant gel, organic raspberry preserves.
