Each olive varietal is selectively picked by hand and cold-pressed immediately to ensure critical freshness and rich antioxidant and polyphenol content. This unfiltered first press combines a blend of Spanish and Italian varietals for uniquely vibrant, green, and peppery brightness — balanced by softer fruit notes. Ideal for dipping or finishing, with a high smoke point of 420°F, making it versatile for cooking.
For this product, FLAMINGO ESTATES sources organic olives grown in sun-soaked California valleys from a small, multi-generational family-owned farm - the farm operates with organic, sustainable and biodynamic principles, honoring the link between people, the land, and the community. The paste from pressing olives is turned into natural compost tea to fertilize the trees and benefit pollinators, and the groves are irrigated with water from their pond, which is rich in soil-beneficial micro-organisms.
