Lemon and Artichoke Baked Orzo

Tri-Color Orzo is made from 100% enriched durum semolina wheat. All-natural flavors from sun-dried tomatoes and spinach give our all-natural Tri-Color Orzo its distinct flavor and color. Convenient and versatile, Orzo is the perfect pantry staple for delicious and satisfying meals; ready in just 12 minutes.

Great in Mediterranean-style salads, stirred into soups or tossed with grilled vegetables for a fast and fabulous side dish. RiceSelect Tri-Color Orzo is Star-K Kosher Certified.

Add salt to water if desired; bring water to a rapid boil. Gradually add orzo. Stir gently and return to a boil.

Cook uncovered for 8-10 minutes, stirring occasionally.

Yields approximately 2 ½ cups cooked orzo.

- Preheat the oven to 350 degrees F.

- In a bowl, mix chopped artichoke hearts, tomato, green onion, garlic, lemon zest, salt, pepper, sugar, olive oil, and flour. Set aside.

- Cook orzo according to package instructions. Drain orzo. Do not rinse. Add orzo and chicken stock to artichoke mixture and pour into a greased casserole, spreading evenly.

- Sprinkle with cheese. Bake in 350 F oven for 20 minutes. Sprinkle with fresh chopped basil and serve with grilled shrimp, chicken, or lamb chops. Makes 6 servings.
