What makes it exceptional: the olives are pitted before pressing — a labor-intensive \"denocciolato\" method that dramatically concentrates polyphenols and produces an oil of remarkable freshness and complexity.The nose opens with vivid green vegetal notes that evolve into green almond, raw artichoke, and chicory, with an intriguing whisper of wasabi on the finish. Bold, balsamic, and beautifully structured.At 931 mg/kg of polyphenols — nearly double the average for premium extra virgin olive oil — this is among the most antioxidant-rich EVOOs in the world.
