My Own Olive Oil - Chef Alexis Gauthier

Being from Provence, olive oil has underpinned my life since I was a child. I have always taken it for granted that if you enjoy high quality olive oil every day you will not only enjoy its deliciousness but you will live healthier and for longer - I only have to think of all the centenarians in my home village for all the proof I need!

When I was given the chance to create my own oil, in the village of Levens, near Nice, I jumped at the chance. The tiny olivery where I have been buying oil for the restaurant for a decade has agreed to commit a small batch for offering exclusively under the Gauthier label, a real honour and something I am very excited about. It is the perfect oil for us as they encourage wild goats of the area to roam freely whenever they like, feasting on the wild herbs, coming and going at will and naturally enhancing the terroir.

My olive oil is quite simply up there with the best I have ever tasted. There are three harvests, picked at different stages each with their own flavour profile, and also a blended oil which is a perfect all-rounder.

For the compassionate, modern future of eating and drinking I believe in - living in harmony with animals - my olive oil takes centre stage as a crucial component in our ingredient repertoire, offering an unparalled depth of flavour and unctuousness. But not only that, it’s high polyphenol content means its hugely beneficial for antioxidants, helping you live more healthy for longer.
