All Pasolivo olives are handpicked and pressed within hours of harvesting to ensure the utmost flavor and the highest level of heart healthy, polyphenols. We store our olive oil in special stainless-steel tanks that remove the oxygen to stop oxidation and bottle in only small batches to ensure you are getting the freshest, healthiest olive oil possible.
